Cooking Class: Something Southern

On Friday I took my second cooking class at Elegant Eating (Smithtown, NY) with my boyfriend, Kevin. This time, we brought some of Kevin's family to join us. What a great time we all had! The food came out superb (just like last time) and we even decided to try out the recipes at home this weekend - which also came out just as good! I highly recommend taking a class here if you are located on the Island.


On the menu for this class was the following:
Pecan and Orange Salad with Arugula and Maple Vinaigrette (Delicious!!)
Spicy Honey Chicken (the star of the night!)
Bourbon mashed Sweet Potatoes
Craisin bread pudding (side dish)
Double Corn Mini Muffins
Cipollini onions and Apples with Bacon
Sauteed Greens with Garlic and toasted pine nuts
Red Velvet Cupcakes with Cream Cheese frosting (I made these often at home!)

The spicy honey chicken was sooo delicious - we went straight home to try it ourselves on Sunday (see below). The bourbon mashed potatoes are the perfect side dish with the chicken. I didn't have bourbon so I used grand marnier instead. I also decided to steam up some broccoli and chop it up into the potatoes - that is my favorite!! I cannot wait to make this meal for some guests!
I never heard of Cipollini onions, but these little onions were fabulous and easy to cook. I will definitely be keeping my eye out for them.
