Grilled Chicken Tortilla Salad

You will need:
Shredded carrots
Cucumber, sliced
Tortilla strips (found at most grocery stores)
Toasted walnuts
Goat cheese (cylinder shape)
1 egg 
1/4 cup seasoned breadcrumbs 
Marinated chicken cutlets, grilled and sliced 
*Your choice of salad dressing

1. Create your salad with the carrots, cucumber and tortilla strips. 
2. In a small fry pan, heat 1-2 tbs of olive oil on medium-high. Fry walnuts for about 2 minutes, stirring often. Drain onto paper towel and let cool a couple minutes. 
3. Slice goat cheese into 1/2 inch thick circles. Dip into egg wash, then cover completely with breadcrumbs. Heat a few tbs of olive oil in small fry pan on medium heat. Fry goat cheese for about 3 minutes, flipping over half thru until golden brown. Let cool for a couple minutes.  
4. Grill your marinated chicken in a pan or on the BBQ and slice thin. Place on top of salad. 
5. Add dressing and enjoy!
