Homemade Fried Rice


Quick meal -  add some chicken or pork into the rice for a main dish!


Ingredients:

1 quart White Rice (I buy a quart from Chinese place, it's nice and sticky) - leaving it in the fridge overnight makes it better to cook with!
1/2 cup Soy Sauce, low sodium
2 tbs pure sesame oil
1 cup total of frozen peas, corn & carrots mixed (let them thaw a bit)
1-2 garlic cloves, minced
2 eggs (scrambled)
2 tbs Butter
1 small chopped Onion - or you can use the frozen chopped onions they sell in the store!
Adobo/Seasoning (brand I use: Goya)
Pinch of Garlic Salt

In the picture above, chicken fried rice is served with Crab Rangoons


Directions:
*I use a non-stick wok for the rest of this recipe.

1.Heat up the wok with pure sesame seed oil to coat it.

2. In wok, Saute the cup of veggies and onion for about 2 minutes on medium heat. Add minced garlic, cook for additional 2 minutes. Slide veggies over to one side. Whisk 2 eggs in small bowl and pour them on the empty side of the wok. Scramble eggs in wok and then mix in with the veggies.



3. Add in adobo, garlic salt and butter. Mix.  Add cold white rice, and soy sauce. Mix well and heat on low until ready to serve.
