This is an easy recipe that you can change up to your preference. Here is my version -
1 pizza dough
3 tbs extra virgin olive oil (evoo)
1 tbs extra virgin olive oil (for toasting walnuts)
~1/4 cup tomato sauce (maybe a bit more)
5 oz lettuce (used packaged Spring Mix), rinsed
3 carrots peeled and shredded
4 radishes, thinly sliced
1/2 cup shelled walnuts
1/2 cucumber, semi peeled and sliced thin
1/2 red onion, thinly sliced
1/4 cup mozzarella, shredded
Salad Dressing - A vinaigrette, or in this case Asian Sesame dressing
1. Preheat oven AND pizza stone at 475 degrees. Stretch dough and place on hot pizza stone. Spread 3 tbs evoo on surface of dough and bake for 6-7 minutes.
2. Once pizza dough is semi cooked, take out of oven and spread on thin layer of sauce. Place back into oven and continue baking for an additional 8-9 minutes, until golden brown. LET COOL!!
3. (While pizza is cooling) On medium-low heat, heat 1 tbs evoo in small fry pan and toast walnuts for 2-3 minutes, moving constantly with a wooden spoon to avoid burning. Remove from pan and let cool on paper towel.
4. Mix lettuce, carrots, radishes, cucumber and onion. Place mixed salad on pizza, then top with mozzarella cheese, walnuts and salad dressing. Cut and serve!
