Food Network Magazine Jan/Feb 2014 - Recipe Review



The January/February 2014 issue of Food Network magazine has been one of my favorites thus far. I like to try a few of the recipes from each month's issue, but last night's was a huge home-run. Cajun pork chop (I used boneless tenderloins) over Kale. It was a bit nerve racking on how much chili powder is used in this recipe, but the flavor is explosive (and not too spicy!). Chopped celery gives the dish texture - the white beans are a great fill - and the onion/tomatoes bring everything together. The pork cooks perfectly and quick under the boiler. It was juicy and tender. Although this dish is super low calories, it does not hint to anything diet - which is especially great for me! Diet food, ick! lol
