These little chips are a great side dish for any BBQ.
Servings: 4
Prep time: 40 minutes*
*Potatoes will sit in bowl of cold water for 30 minutes
Cook time: 4 minutes
Ingredients:
5-6 petite potatoes (fingerling work), rinsed and patted dry
Oil for frying
Salt
Directions:
1. Slice potatoes thin, about 1/8 inch thickness. (They call me mandolin hands!! haha)
Let potatoes sit for 30 minutes in cold water. Drain and pat dry with paper towel.
3. Heat oil (375 degrees) for frying. I used my Oster Deep Fryer. Fry for 2 minutes or until golden brown. Season with salt as soon as they come out of the fryer. Let sit for a few minutes until chips harden up.
4. Try not to eat ALL of them!!! :) Enjoy!
