You can never go wrong with some fried flounder (unless you get a bone or two in them lol) - we bought some fresh local flounder at the fish market near my house - they were big and fluffy pieces. We served them with baked zucchini sticks (chipotle hummus as dipping sauce) and wild rice, which is Kevin's favorite.
1 lb flounder
1/2 cup Cajun seasoning (shown below)
1/4 cup of milk
1. Wet the raw pieces of fish with a little bit of milk over the sink.. let the milk drain off a bit and then place in a large zip lock back filled with the Cajun seasoning mix. Shake it up! until the pieces of fish are fully coated. Place on paper plate and let sit for 5 minutes
2. In a large fry pan, start heating up your oil. Once ready, place fish in and fry for about 3 minutes on each side. You can flip a couple of times until they are golden brown like above.
