Baked Zucchini Sticks


Been seeing these ALL over Pinterest. Decided to try them but didn't realize you had to put the zucchini sticks in the refridge for TWO HOURS! so we made a little adjustment to the recipe and they still came out delicious. Took much less time this way!

2 Zucchinis (I used 1 green. 1 yellow)
2 eggs, scrambled in a bowl
1 1/2 cup of seasoned bread crumbs
Salt, Pepper, Italian Seasoning (sprinkles of each)
1 pc of wax paper
1 dipping sauce of your choice (we used Chipotle hummus)


1. Cut zucchinis in half, then slice up into french fry like pieces. Try and trim off the mushy seeded parts. In a bowl, Sprinkle with salt and toss. 

2. Preheat oven to 425. Scramble eggs in shallow bowl, and place bread crumbs in separate bowl. Place zucchini sticks into egg wash, then into bread crumb bowl. Place onto wax paper over baking sheet. 

3. Once all sticks are breaded, place into oven and bake for 22 minutes flipping the sticks halfway thru. Once golden brown, take out and let cool - enjoy!
