Jalapeño Cheese Dip

I can say the word 'jalapeño' over an over - it is so fun! This recipe was inspired by a dip at Rumba, a restaurant in the Hamptons that we love so much. I looked all over the internet to find one that looked similar. This one is definitely it!
*Note: It is definitely on the more spicy side!

What you will need:
1/4 cup jalapeño slices, chopped
1/8 cup of jalapeno juice (from the jar)
1/4 cup pimentos aka roasted red peppers in the jar (found in same isle as the jalapeño slices), chopped
1 package of REDUCED FAT cream cheese (regular cream cheese seems to overpower the dip)
1 block Colby/Jack cheese , shredded
1/4 cup Mayo w/ Olive Oil (shown below)
Salt & Pepper, to taste

1. Fill a mixing bowl with all ingredients.

2. Mix on low speed until well blended, about 3 minutes

3. Serve with your favorite chips!

  1. Do you think that you could use fresh jalepenos? I have a bunch in my garden, ready to use!

    1. I'm sure you can (I've never tried as my husband hates fresh ones lol)! I do use the juice from the jarred jalapenos to have some liquid "spice" - so you may want to find something to substitute that (maybe green tabasco or something similar?) - good luck!
