You will need -
Mini Ravioli (found at local super market, trader joes, etc) - I got cheese filled.
1 tbs olive oil
1 garlic clove, minced
Handful of baby portabella mushrooms
1 small yellow onion, chopped
10 oz package of grape tomatoes
1 packet creamy pesto sauce (or homemade)
Bring large pot of water to boil and cook ravioli as instructed.
In a skillet, heat olive oil and sauté mushrooms, tomatoes, onion, and garlic. Add pepper to taste.
I used creamy pesto sauce from a packet (knorrs). Add pesto sauce and sauté mixture to raviolis and serve. Add some Parmesan cheese please!
Served with Dijon crusted salmon, steamed green beans and bread with Italian dipping oil.
*note: in the top right corner is Chipotle hummus - it was awesome!!
