Sugar Cookies!

Ahhhh - I love sugar cookies. I've only made them twice so far, and I will be the first to admit.. I am not great at cutting them lol. They seem to get sticky on me, and get soft easily, even when I keep the dough in the fridge over night. I've tried two different recipes now - the 2nd one I liked better.

Heat your oven for 30 min before cooking these bad boys.

6 cups flour
3 tsp. baking powder
2 cups butter
2 cups sugar
2 eggs
2 tsp. vanilla extract
1 tsp. salt

Cream butter and sugar. Add eggs and vanilla. Mix dry ingredients and add to butter mixture. Mix well.

Chill for 1 to 2 hours -- or overnight

Roll to desired thickness and cut into desired shapes. Bake on ungreased baking sheet at 350 degrees for 8 to 10 minutes or until just beginning to turn brown around the edges. This recipe can make up to 8-dozen 3” cookies.

I used my new blackhawk helicopter cookie cutter for Ryan's military friends - they were quite impressed! I ordered the cookie cutter from a military website called
herogearstore. The other cookies were footballs and Giants helmets to celebrate the super bowl. and yep MY BOYS WON THE SUPER BOWL!!!!!!!!!! (I didn't use the correct icing to do the writing on the cookies so it does look messy.

To make the royal icing:

3 eggwhites
4 cups of convectioners sugar

If the icing becomes to thick, add a little bit of water until it gets to desired liquidness. If it's too liquidy, add some more sugar. We used wilton coloring to color the icing.
