This is the second time I've made red velvet cupcakes. The first batch had a lot of great reviews so I am on my way to perfecting the recipe. This time I focused more on the icing - trying to get the best mix of creamcheese and sugar. I prefer it tasting more sugary :)
Then to top off the cupcakes, I took one aside - without icing it - and I put it against a grater. The grater allowed little pieces of cupcake to fall and I used that to sprinkle on top. Here are some pics.
